Roasted Garlic Mayonnaise

This one has punch. A proper Spanish-style alioli made with roasted purple garlic for depth, richness and a gentle smoky edge. It’s smooth and creamy, but far more intense than standard garlic mayo.

Made with egg yolk, olive oil, sherry vinegar and Dijon mustard, it’s rounded, savoury and properly balanced, bold without being harsh.
