Prepared using chunky pieces of Yellowfin Tuna, these kebabs are coated in a rich Oriental-style marinade inspired by the savoury flavours often found in Asian cooking.

Sesame, soy and aromatic spices combine to create a deeply savoury marinade with hints of warming spice and incredible depth of flavour. Think more along the lines of a good hoisin sauce than a fiery chilli marinade - rich, complex and wonderfully moreish, but without the sweetness.

The firm texture of the tuna makes these kebabs incredibly versatile. They’re fantastic straight from the barbecue, but equally delicious removed from the skewer and served with sticky rice, tossed through noodles or piled into soft tacos.

If you’re looking for something a little different from the usual barbecue fare, these are hard to beat.

Tuna is one of the few fish that many people enjoy cooked anywhere from rare to well done. In fact, some of the world’s most popular tuna dishes are served barely cooked at all, with chefs often searing the outside whilst leaving the centre beautifully pink.

That’s one of the reasons tuna works so brilliantly on a barbecue - you can cook it exactly the way you like it.

There are very few rules when it comes to great tuna.

Tuna is wonderfully versatile and can be enjoyed anywhere from beautifully rare to fully cooked, depending on your preference.

For rare tuna, cook over a hot barbecue, griddle or frying pan for around 30-60 seconds per side, just enough to colour the outside whilst leaving the centre pink.

For medium-rare, allow around 1-2 minutes per side.

If you prefer your tuna fully cooked, continue cooking for a little longer, although we’d always recommend keeping a touch of pink in the centre if possible.

These kebabs are equally delicious served straight from the skewer, sliced over sticky rice or noodles, or tucked into soft tacos with crunchy salad and a drizzle of your favourite sauce.

The beauty of tuna is that you get to decide how rare is rare enough.
