Chalkstream Farm is situated on the rivers Test and Itchen. The Rainbow Trout is slow grown for 2 years. Because of the 'gin clear' waters found naturally in a chalk stream river, the fish are lean with a unique clean taste. Each fish weighs around 3 kilos each, so the portions are lovely and thick

Follow any recipe for salmon, or simply pan fry the fillets in a little oil with come sea salt and herbs such as lemon thyme and rosemary

Allow 200g of fillet per person for a generous portion
