A true classic, Dover Sole is regarded as one of the finest fish caught around the UK. With firm meat, it is sweet and full of flavour. Delicious cooked a la Meunière either on the bone or as fillets, drizzled with the rich buttery sauce. You can always add a few brown shrimps to ‘pimp up your fish’ even more.
Dover Sole have very rough, scaly skins, so we would highly recommend that you ask for them skinned whether you're going to enjoy them whole or filleted
