This salsa is a garlic mayonnaise from Catalunya. It has a smooth and light texture with a rich garlicky flavour from the Spanish purple garlic. Peppery and grassy extra virgin olive oil made using Arbequina olives gives it richness. While the addition of lemon juice counterbalances the two perfectly and gives a bit of zing!
Alioli is used in all sorts of meals in Spain: with fish and seafood, meats and grilled vegetables. In Catalunya it is served with paella and fideua (the Catalan pasta version of a paella). It is also very good with chips!
