Cut from larger fish. the loin is the ultimate cut of prime hake. A beautiful thick piece of fish, each whole double' loin will serve around 6 people. We split the loins, removing the fins from along the centre, leaving a stunning, meaty piece of fish perfect for roasting whole or pan frying as fillets

Cooking tips

For simply roasted hake loin, either as a whole loin or in portions, just drizzle with a little olive oil, Season with se salt, a squeeze of lemon and some fresh herbs and roast at 180'c for 10-12 minutes depending on thickness.
