Dover Sole

A true classic, Dover sole is regarded as one of the finest fish landed around the UK and it stands apart from all others. What really sets Dover sole apart is its texture. The flesh is firm, almost 'squeaky' when perfectly cooked and it holds its structure beautifully rather than flaking apart. The flavour is naturally sweet, clean and refined, which is why it has been prized by chefs and fish lovers for generations. Dover sole are easily recognised by their distinctive shape and very rough, scaly skin. For this reason, we strongly recommend having them skinned, whether you plan to enjoy them whole or as fillets it transforms the eating experience. This is an elegant, luxurious fish that rewards simplicity and quality, and one that never disappoints. Did you know…? Dover sole is the only ‘true’ sole landed in the UK. While lemon sole, megrim and witch are often labelled as sole, they’re actually just flat fish. Dover sole’s unique firm texture and refined flavour are what set it apart and make it so highly prized.
