MUSSELS ARE MISBEHAVING!! IT'S VERY SAD, BUT IT'S THAT TIME OF YEAR... MUSSELS START TO SPAWN IN SPRING AND THEY BECOME REALLY FRAGILE. AS THEY PUT ALL THEIR ENERGY INTO REPRODUCTION, THEY BECOME LESS MEATY AND ABSOLUTELY HATE AN OVERNIGHT STAY IN YOUR FRIDGE. IF YOU REALLY, REALLY HAVE TO HAVE MUSSELS, GIVE US A CALL ON 07354 849465 AND WE CAN ADVISE - BUT YOU REALLY NEED TO COOK ON THE DAY YOU COLLECT. IT'S ALWAYS BETTER TO AMEND YOUR MENU AND HAVE SOMETHING ELSE DURUNG SPWANING SEASON - WE WANT YOU TO ENJOY THEM WHEN THEY ARE AT THEIR BEST!! ALTHOUGH PEAK SEASON FOR QUALITY IS THROUGH THE COLDER MONTHS, THEY WILL RECOVER IN A FEW WEEKS, SO IT WON'T BE TOO LONG TO WAIT IF YOU'RE DESPERATE! Tim and the boys at Porthilly shellfish have been supplying us with our oysters and mussels for several years. They are the best mussels we've ever seen. Heavy, hard shells and sweet plump meat. They're a truly robust mussel, grown on the bed of the Camel Estuary in Cornwall and we get nothing but praise for them. They are at their best from September to April

Cooking tips

Porthilly mussels are very robust, but like all bivalves they don’t particularly like a chilly fridge. If you find any that have opened when you go to use them, DON'T PANIC! Take them out of the bag, pop them in a colander and give them a really good hard shake with little splashes of water. Tim's mussels really are robust and they will close. Be quite brutal, they sometimes need a good shake about but you will see the shell start to close. As long as there's movement (even if it's very slow), they are alive and you can just throw them in the pan and enjoy
