Herring are very underutilised and over the years have gone a little out of fashion. They have been a hugely important catch to the UK for centuries. All around our coast fishermen caught these little silver darlings and for many years the wives of fishermen would clean and pack the catch. Rollmops are herrings that have been filleted, then marinated and are ready to eat. Ultra delicious, these Orkney Rollmops are definitely one of our favourite things
