Having worked for over 20 years as a Seafood Product Developer, first for Youngs Seafood and latterly for Sainsbury’s Supermarkets, Sue was very aware of what a lot of people were looking for when it came to cooking fish. Removing the ‘fear factor’ and making it easy was key. The main aim of our freshly prepared, ready to cook range is to make it really simple for customers to prepare a home cooked meal without compromising on quality.
Many of our customers are very confident cooks and love to prepare and cook their fish from scratch, however sometimes, they also want something quick and easy yet utterly delicious. Our marinated fish and shellfish are hugely popular and some days we struggle to keep up with demand for our Fish Pies and Fishcakes. The feedback we get from all our ‘added value’ products shows we’re getting it right.
Fish Pies, Fish Cakes & Coquille
Everyone loves a Fish Pie, and ours are hugely popular. Using ‘todays’ white fish, usually cod, hake and haddock, with a couple of chunks of salmon and smoked haddock its really important that the fish is the same quality that you would see on our counter. We make our own rich, cheesy sauce, using mature cheddar with a dash of Dijon and English mustards and cook and mash our own potatoes with lashings of real butter and a sprinkling of seasoning. Topped off with more mature cheddar, all that you have to do is pop them in the oven and enjoy. They freeze really well, but because they are so dense, they’re best defrosted prior to cooking
And, as we make everything from scratch, its easy to take requests to ‘pimp up’ our pies just for you. If you’d like prawns, or don’t like smoked haddock, that’s fine – we’ll tailor make it just how you like it. And if you want the ultimate cheat, you can even bring in your own pie-dish and we will fill it to your specifications. We promise we won’t tell anyone….
Our fishcakes are also made inhouse, and we usually have 4 varieties – Cod, Salmon, Smoked Haddock and Crab. Coated in panko crumb and flash fried to give them a crispy coating, all you have to do is pop them in an oven for 20 minutes. They freeze really well and can be cooked from frozen.
Coquille St Jacques are definitely a little bit retro, reminding me of Mum & Dad’s dinner parties in the 80’s, but that doesn’t stop them from being enjoyed today. Scallop shells are packed with scallops, enrobed in our ‘fish-pie’ cheesy sauce and then topped with panko crumb and parsley. Just pop into the oven and they’re good to go.
Marinated Fish & Shellfish
Our ready marinated counter has been a revelation! It took us just over a year to source the perfect marinade supplier and we haven’t looked back. Investing in a bespoke counter to display all the delicious products, we still don’t seem to have enough space for everything. With several generous sized portions of various fish to choose from, all drizzled in delicious marinades you can either have your fillets popped into an ovenable cook bag, or if you like a nice crispy skin, simply pan-fry.

Even in this counter, we work with the seasons. As soon as the sun shows itself we switch onto our infamous kebabs. These are hugely popular and throughout the summer we can have the whole team working flat out to keep up with demand. As summer draws to a close, the selection returns to marinated fillets and whole fish.
Dressed to Impress
As well as our marinated fish, we also prepare some delicious ‘fine dining’ solutions. One of our most popular is our Cornish Monkfish wrapped in Parma Ham. These generous portions of monk are super easy to cook, but are so impressive.
