They're back!

Wild Bass are in season from 1st April until 30th January each year. These stunning fish are prized by chefs and food lovers around the world. Our fish are always over the kilo, and can go up to around 5kg in weight. Throughout the summer, Jim Hackett lands his catch directly to us from Selsey, but we also buy some off Newlyn and the South Coast.

Cooking tips

Whole roasted bass make a show stopping centrepiece for any special occasion, simply stuffed with herbs, drizzled with oil and roasted in a hot oven, they look amazing brought straight to the table. Or, if you prefer your fish filleted, they can be pan-fried giving a crispy skin and luscious, meaty flakes


One large fish of around 1kg is perfect for 2 people. Allow around 4-500g of whole fish per person - remember you will lose roughly 50% of the weight of the whole fish if you have it filleted.
