We love
fish, it’s what we do. It is our passion and we love nothing more than to impart our knowledge. Between us we have over 50 years experience in
the seafood industry (we both started at a very young age!)
Duncan Lucas
Duncan has worked in the seafood industry for over 25 years. From fish farming to retailing, both private and supermarket, as well as value added seafood
manufacturing, he has an unchallenged knowledge of the whole sector. He is recognised as a leading authority within the industry, and is probably the most highly skilled ‘fishmonger’ in the
UK, winning the national fish craft championships more times than he can remember! Although he no longer enters competitions, he is still very much involved in them, training and judging for the
National Federation of Fishmongers.
Sue Hallman (now Sue Lucas!)
Sue has spent all her working life in the seafood industry.
For almost 20 years, she thoroughly enjoyed life as a lady fishmonger, running busy independent fish shops. She then moved into manufacturing and has spent the last 10 years working with ‘ready to eat’ seafood. She is responsible for having developed some of the highest quality 'Award Winning' seafood products available through the
UK’s leading supermarkets.
Both Duncan and Sue have a professional attitude, covering all aspects of seafood preparation and cooking. Trainees
of all levels respond well to their calm, encouraging methods, and after a few hours can significantly increase their understanding of handling fish and
shellfish. They are both natural communicators and have an infectious enthusiasm which makes learning fun.
Their vision is simply to increase people's understanding of seafood.
To show that it doesn’t have to be complicated or time consuming, and that by learning how to handle good quality raw material, you need very little else to create a fantastic eating extravaganza!
